Squash, spices, citrus… This cake warms my belly and my soul every time I taste it. I have been playing with the recipe ever since Thanksgiving and I think I have found the perfect combination of ingredients.

Creamy Squash-Gingered Quinoa

Tis the season for butternut squash! I have been adding it to everything lately, and was very excited to come up with this delicious recipe for Gingered Butternut Squash Quinotto. It was so easy to make, and even those who had never heard of/seen quinoa before really liked it.
