How do you like your gluten free waffles?

For the past 3 weeks or so I have been creating a recipe for Gluten Free Belgian Waffles. It has been awesome! I found a spectacular waffle iron at a local thrift shop here in Santa Fe, NM and since then have been whipping up variations of gluten-free waffles, attempting to create the perfect balance of fluffy, crispy and delicious. This weekend, I am hoping to finalize the recipe, but I would love to know:

Making New Friends

The weekend has arrived, I am sitting on my porch reflecting on the beautiful week that just passed here in Santa Fe. Spring is arriving, and blossoms are peeking out of every corner. Daffodils, apricot buds, and possibly even cherries. (I still have to learn how to identify all of the flowers…) Soon enough there will be fruit! I thought it would be fun to share a little bit of my week with you.
StoryPortrait Media – photo shoot
I think the highlight of the week was my photo shoot with Genevieve Russell from StoryPortrait Media. We spent two hours together on Wednesday morning exploring downtown Santa Fe, and she took some awesome photos! Genevieve is really talented and made the shoot fun and relaxing. The final edits are still in the works but here is a peek at what she captured:

Gluten Free Buckwheat Muesli

Have you ever priced out muesli before? It is pretty crazy how much stores/companies charge for “Swiss Muesli” or “Alpine Muesli”. Honestly, the ingredients are not that expensive, and it is super easy to make. Not many companies make a gluten-free version of it though, so a few years ago I started creating the muesli of my dreams.

Rosemary Roasted Potatoes with White Truffle Oil

I know that Rosemary Roasted Potatoes are not necessarily a springtime dish, but spring is also known as Primavera, which in Italian translates to the first truth. So, since it is the time of truth, I will tell you that this recipe for Rosemary Roasted Potatoes came about because my Rosemary Christmas Tree was dying. I am not very good with plants. I wish I could be, and every so often try to convince myself that I can have success with a plant.
For some reason I had this belief that rosemary is a pretty hearty plant and therefore would be an easy one to take care of. I was wrong. My poor Rosemary was on her last leg when I pulled off the last of the viable leaves from her limbs to make this dish. We had a good run though. We celebrated the holidays together. You can’t get much more intimate than that…with a plant (although I know someone who has). She was a sweet one, and the great thing is that she will go back to the Earth to create more beauty…just in a new way.

Udi’s Gluten Free Pizza with Arugula and Truffle Oil

Who doesn’t love pizza? It is festive, it brings people together, and it is delicious. Now I totally understand if you feel like you can’t eat it for one dietary choice for another, and those of us who are gluten-free are definitely in that group. When you go gluten-free you definitely miss pizza.
The past 2 times that I have returned to Florence, Italy to visit my previous home and my friends that still live there, I have definitely met the challenge of pizza. You see, I am not celiac so I can eat glutinous foods if I choose to, but I definitely have my own adverse reactions, which is why I generally choose to avoid gluten. But, when given the choice, it is REALLY hard to refuse a wood fire/brick oven pizza freshly made with mozzarella di buffalo, fresh arugula and shavings of parmagiano reggiano.

Peach Rooibos Sun Tea

Yesterday I was talking on the phone with a friend and went into the bathroom to get something out of the medicine cabinet. Just as I looked in the mirror he made me laugh and I was astonished! I couldn’t believe my crows feet! I had never seen them before. I have noticed that I have a few minor wrinkles, but crows feet? I was happy to be in total denial but now I know… I am aging.
I had a pretty funny conversation with my sister the other day, who is 18 months my elder. I told her that I had been on my morning walk and had realized that I truly didn’t know how old I was. I knew that 30 and 31 had arrived, but was in total disbelief that I could actually be 32. So I knew I could check in with her to gauge my age. She laughed and confirmed that I was indeed 32. I am still in shock. It is usually not until I progress to the next year of my life that I aknowledge the previous age though…then promptly forget my current age.

Mele in Cartoccio – Baked Apples

I lucked out at Vitamin Cottage again the other day. More $1 bags of organic apples… So I bought two. I recreated my Raw Apple Sauce recipe and then decided to whip up an old favorite: Mele in Cartoccio. I first discovered this recipe while I was living in Florence, Italy. I used to collect the Cucina Naturale magazines and this was just one of the treasures. Mele in Cartoccio is translated in a few different ways, but basically it means that the apples are wrapped in paper/foil. They cook in their own “bag” in the oven, steaming themselves to deliciousness….

Kale and Coconut Mung Bean Stew

It has been a long week and a half. Moving (within Santa Fe), job interviews, packing, unpacking, arranging a home… you get the picture. I am still exhausted and my body is sore, but I am feeling like I have a little bit more energy today and finally had some time to cook in my new kitchen! And by new I mean NEW! We found an apartment that has been completely redone, so the kitchen has all new appliances, shiny granite counter-tops and a skylight I used to only dream about.
So I am sure you can imagine that I was excited to get cooking. Thankfully I didn’t go too crazy, but I have been dying to whip up this stew for a few months now, and finally had the time and the ingredients. You see, I used to have a great recipe for Coconut Mung Bean Stew that I made all last winter, but I never wrote it down…so when winter came around again this year, I couldn’t remember it. I have pieced together this recipe from what I remember, and some inspiration from what others have done with a Mung Stew and I have to say…it is yummy. (Next time I make it, I am going to double the recipe so I have more leftovers!)

Quinoa Breakfast Pudding

What a busy week! Not that it is all bad, but there is definitely a lot going on. I am moving house this weekend which is never an easy process for me. In addition I have interviewed at two different places here in Santa Fe to hopefully boost my career in the Bodywork field. And…I am blogging in multiple locations. This week I started to write a series on using Facebook for your Business over on my Web and Graphic Design blog, and I have also written a guest post on the Yoga on the Beach blog sharing my recipe for Quinoa Breakfast Pudding.
