Gluten-Free Chocolate Chip Banana Bread
Happy Valentine’s Day! Lately I have been feeling the desire to take more photos and feel more creative, so here are a few images of what is making me feel the Valentine’s Day spirit today.
Oh, and definitely check out the gluten-free Chocolate Chip Banana Bread recipe below! This bread is super moist and so decadent. Perfect for a sweet breakfast, or loving afternoon treat, or all of the above!
Gluten-Free Chocolate Chip Banana Bread
1 c amaranth flour
1/2 c buckwheat flour
1/2 c chocolate chips
1 t baking powder
1/2 t baking soda
pinch of salt
2 eggs
1/4 c agave
1/3 c coconut oil (warmed to liquid)
2 ripe bananas
1/2 c apple sauce (unsweetened)
Preheat oven to 350 F and grease a bread pan with coconut oil.
Combine the amaranth flour, buckwheat flour, salt, baking powder and baking soda in a medium bowl and set aside.
Using a food processor blend the bananas and apple sauce until smooth. Add in the eggs, agave and warm coconut oil and blend until combined.
Pour the liquid mixture into the flour mixture and whisk until smooth.
Fold in the chocolate chips.
Pour the batter into the bread pan.
Bake for 30 minutes at sea level, or if you break the batter up into smaller loaf pans. If you are living at altitude it will take longer; it took me about 50 minutes. Test with a knife in the center. If the knife comes out mostly dry, its done!
