Chocolates with Chia Seed and Coconut
So when I was making the chocolate tartes the other day, I had some leftover filling…and one should never waste chocolate… So I decided to make up some chocolates using the same base as the tartes. I added in some chia seeds and shredded coconut to the mix and filled my little candy molds (something like this), ready to indulge in bite-size chocolate goodness.
What a great homemade chocolate treat to make your partner or friend for Valentine’s day! These chocolates are pretty much guilt-free in my book. Full of raw cacao antioxidants, medium chain fatty acids from the coconut oil, low-glycemic agave and the mighty chia seed superfood, they are bound to make you smile the day away.

Chia and Coconut Chocolates
3 tablespoons coconut oil (warmed to a liquid)
1 tablespoon canned coconut milk
2 tablespoons raw agave
1/3 cup raw cacao powder
2 tablespoons chia seeds
1 tablespoon shredded coconut
Combine all ingredients in a medium bowl until well mixed.
Distribute chocolate batter into the molds making sure to press in firmly so that there are not air pockets.
Cool in the fridge for 1 hour.[/print_this]
