Sundried Tomato Avocado Spread
I cannot take credit for this amazing creation, but it is so good I also don’t want to keep this delicious secret to myself. C. invented this yummy combination of flavors and for some reason I always have to nag her to make it. I love it! I was please to eventually discover that it is a great compliment to our Veggie Burger recipe.

Sun-dried Tomato Avocado Spread
2 shallots
2 T sun dried tomatoes*
2 T finely chopped parsley
1 T lemon juice
2 T olive oil
2 avocados
Place first 4 ingredients in a food processor and blend until roughly chopped. Slowly pour in oil and blend until smooth. Stir in chopped avocado until it reaches desired texture.
*About Sun-dried Tomatoes: If you are lucky you can find sun-dried tomatoes that are still soft. In this case you do not need to rehydrate them before making this recipe. If your sun-dried tomatoes are completely dry, soak them in warm water until soft. Depending on the tomatoes this could take up to 1 hour. You do not need to soak them in olive oil, and I suggest not purchasing jarred sun-dried tomatoes as there are unnecessary ingredients in the jarring process.
