Gluten-Free Buckwheat Waffle Recipe
Did it work? Did this sexy photo of gluten-free buckwheat waffles distract you from the Strawberry Rhubarb Sauce mess in the kitchen? Was I doing too many things at once? Probably, but sometimes I come up with so many fun ideas that when I finally get in the kitchen I get a little “gung-ho”.
These days I am basically working 4 jobs, and in the middle of that, trying to continue feeding myself with healing, nourishing foods. So long story short…I never have time to take photos of the yummy dishes because I eat them as quickly as I make them (I have about 5 recipes that I still need to photograph so that I can share them!). Today, I actually had a little time. I am coming to the end of one web design project, and about to start another, and I had the morning off from bodywork, and felt it was the perfect time to reclaim the kitchen, and finally complete my Gluten Free Buckwheat Waffle recipe.
It took way longer than I thought it would…partly because I had a business meeting with my mother while I was supposed to be making batter #2 and partly because I only have 1 waffle-maker. That might need to be changed. Each individual waffle pair cooking for 12 minutes…it adds up.
So yes, I felt a little rushed after cooking and photo shoot and making my Strawberry Rhubarb sauce, and still needed to take a shower, and maybe I left the sauce unattended on the stove top while I showered…and just maybe it boiled over. No biggie… I cleaned it up, and the sauce is delicious, and now dessert tonight is going to be amazing. Did I mention there will be Maple Pecan NadaMoo? You know…waffles, strawberries, maple? Yeah it will be awesome.
Anyway, back to the recipe.
I have been planning for months to continue tweaking my recipe until I created the perfect waffle, crispy on the outside, not too dense, some fluff for sure. I even took a poll to see what others were looking for in a gluten-free waffle…and you know what I discovered? Waffles are delicious and they don’t need to be perfect! So today, after making 3 different kinds of waffles, I decided on one recipe that I am enjoying the most so far. I would love it if you would try it out, tell me what you think, and share your own tips on how to get your gluten-free waffles just-right.

Gluten-Free Buckwheat Waffles
1 c buckwheat flour
2 T arrowroot powder
1/2 t salt
2 t baking soda
2 eggs
1 1/4 c seltzer
1 T coconut oil, warmed to a liquid (plus more for waffle iron)
1 T agave
zest of 1 lemon
juice of 1/2 lemon
Heat waffle iron according to manufacturer’s instructions.
Combine dry ingredients in a bowl.
In a separate bowl beat eggs. Then combine with coconut oil, agave, seltzer and lemon and stir until mixed.
Add wet ingredients to dry, and stir until all ingredients have incorporated. Do not over stir.
Once waffle iron is heated, add a little coconut oil to each griddle using a brush. Pour 1/2 c of batter onto bottom griddle (you may need more or less depending on the size of your iron). Make sure that griddle is covered, but not overflowing. Close waffle iron and cook according to manufacturer’s instructions.***
***Note: Interestingly enough, every other recipe I have seen for waffles always says to use the manufacturer’s instructions to cook the waffles, so I was thankful that my hand-me-down waffle iron had instructions. The catch is that the manufacturer of my waffle iron just as easily passes the buck, by saying to cook the waffles according to the recipe given. Ha! So, here is a tip. These waffles take 12 minutes to cook here in Santa Fe. There is a chance it could take less time depending on your altitude and your waffle iron. I would check after about 5 minutes, but don’t be surprised if they need more time.

I didn’t realize buckwheat was 1) not wheat and 2) gluten free until I googled it based on this recipe. Here is an article with information you are obviously familiar with but might be of interest to celiacs who read your blog

Thanks Christophe! Yes, buckwheat is gluten free, and is a great grain to work with. It has a hearty flavor, and is full of nutrients. It makes great pancakes and waffle, and is a nice flour to combine with others to add an interesting flavor to baked goods!

May I ask what waffle iron you used?
I have been searching for one with triangular pattern.
I use a VillaWare Inter-Bake 3 which I found at a thrift shop a while ago… Hope that helps!
